Who doesn’t love an easy dinner that can work with a weekly meal prep? These stuffed peppers are filled with cauliflower rice instead of regular rice, and I really don’t think I’d ever make them with regular rice again.
I recommend making the cauliflower rice ahead of time, which is why I provided the directions and ingredients for this separately below. I find that frozen cauliflower rice is often soggy whenever it is microwaved and even sometimes when it’s sauteed, unless you really take your time with it and I’m just not about standing over the oven and constantly stirring cauliflower. So one day, I randomly tried baking it, in hopes that it would dry out/crisp up a bit, and it worked! It takes a little less than an hour when cooking from frozen, but it is totally worth it for the texture! Now I only make cauliflower rice this way.
